YUUGATEI – MUTSUMIAN

THE PROCESS BEHIND
RICH & FLAVORFUL UNAGI RICE

Authentic Japanese Flavor – Care in Every Step

At Yuugatei – Mutsumian, the flavor of a bowl of unagi rice comes from more than just the sauce or grilling technique. It begins with careful eel selection, precise preparation, controlled heat, and thoughtful finishing before each dish is served.

Every stage requires focus and precision, because even a small difference in the way the eel is handled can affect its tenderness, aroma, and final flavor.

FROM INGREDIENT TO TABLE

4 Steps Behind the Flavor of Yuugatei Unagi

A delicious unagi dish is not defined by a single moment. It is the result of a series of carefully connected steps, beginning with the whole eel and continuing until the finished bowl is placed before the guest.

01

EEL SELECTION

Quality begins with choosing the right ingredients

Before entering the kitchen, each eel is carefully checked for its condition and overall quality. Eels that do not meet our standards are not selected for preparation.

This may seem like a simple first step, but it directly affects the texture and flavor of the finished dish. High-quality ingredients help the eel retain its tenderness, natural flavor, and ability to absorb the sauce during cooking.

02

EEL PREPARATION

Precision is reflected in every cut

After selection, the eel moves on to the preparation and deboning stage. This step requires a steady hand because eel meat is delicate and can easily be damaged if handled without precision.

The goal is not simply to clean the eel. Each fillet should retain an attractive shape, stable texture, and suitable thickness so that heat can be distributed evenly across the entire surface during grilling.

03

GRILLING THE EEL

Heat, timing, and sauce must be controlled together

Grilling is one of the stages that most clearly defines the flavor of unagi rice. The surface should become fragrant and beautifully glazed, while the meat inside remains tender and moist.

During grilling, the sauce is applied in stages so that the flavor gradually coats and penetrates the eel. If the heat is too strong, the meat may become dry. If the heat is too low, it becomes difficult to achieve the characteristic aroma and color.

04

FINAL PLATING

The dish is completed only when every detail meets our standards

Once the eel leaves the grill, it is not served immediately. Each portion is checked again for color, tenderness, surface texture, and the amount of sauce before being placed over warm rice.

A finished bowl of unagi rice should achieve balance: the rice should be served at the right temperature, the eel should remain tender without becoming mushy, and the rich sauce should complement rather than overpower the natural flavor of the ingredient.

Only when all of these elements meet our standards is the dish completed and served to the guest.
